Greek street food favourites SASA are adding to their original SPARK unit by opening a restaurant on Piccadilly called INOS. Owner Martin Tsatsas tell us all about it.

I was introduced to Greek food the traditional way, through my family, and it has been part of my life ever since. Food is an institution in our culture and everyday life; the cuisine is simple, honest, and most importantly, Greek!

Simple is sometimes misunderstood; Greek cuisine is sophisticated in its simplicity. Recipes have been elaborated for a long time using specific techniques to achieve that quality. A huge gratitude to all Greek parents and grandparents for working so hard to keep it so simple and delicious! And it’s honest because you can’t cheat with Greek food! Quality, quantity, and consistency are ingredients of every dish.

Cooking has been a passion of mine since I was young, and the idea of having a food business started when I was unhappy working long office hours; I replaced them with long, more interesting, kitchen hours! Having this plan in mind, we moved to the beautiful city of York, and me and my wife Kristina were looking constantly for a place. SPARK believed in our project back in 2020 and offered us a small unit in which we created SASA Greek Street Food. We fitted our project around the space we had at that time, and I’m proud to say it continues to be 100% the same since day one!

SASA started out of my passion for cooking, and I believe its success stands on the consistency and hard work that we have put into it. We worked as a family who wanted to bring to our customers an authentic cuisine that reminds of the bold flavours of Greece. We pride ourselves on using fresh ingredients, very good quality meat and authentic Greek products like olive oil and feta cheese.

INOS will be the same concept plus everything else that we can’t offer at SASA. We have longed to have our own space where we can accommodate our customers and offer them a full Greek experience. At INOS we have expanded our menu to include new traditional dishes, Greek wines and Greek spirits. INOS is the space where people can enjoy a relaxed lunch or dinner with friends and family and feel at home.

Any cuisine is extremely related to the nature and environment of the country it has been created. Food is an experience not only to the sense of taste, but to a combination of all the senses. This is what INOS will try to achieve: a balanced combination of activating senses through food, drinks, environment, atmosphere and service, so our customers can have a full authentic Greek hospitality experience.
